How to properly cook adobo

Ingridients:

  • Soy sauce 
  • pork 
  • Vinegar
  • Garlic
  • Bay leaves
  • Black peppercorns
  • Onion
  • Potatoes
  • Water

Instructions

  1. Marinate the pork (In a large bowl, combine the pork cubes with soy sauce. Let it marinate for at least 30 minutes 
  2. Sear the pork (Remove the pork from the marinade (discard the marinade) and brown the pork pieces in batches, ensuring they are well-seared on all sides. Remove and set aside.
  3. Saute Aromatics (In the same pot, add a bit more oil if needed. Sauté the onions until they are translucent and soft.
  4. Simmer (Return the seared pork to the pot with the onions and garlic.
  5. Cook (Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for about 1 to 1.5 hours, or until the pork is tender and the sauce has reduced. You can add a bit more water if needed during cooking.
  6. Finish (If using, stir in the brown sugar and adjust seasoning with salt and pepper to taste.Simmer for an additional 5-10 minutes to let the flavors meld together.
  7. Serve (Serve the adobo hot with steamed rice. The rich, savory sauce pairs perfectly with rice.
